Ground beef filling:

  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 pounds of ground beef
  • 2 capsicum, finely diced
  • 15ounce can canned corn (drained)
  • 15-ounce can canned kidney beans (drained)
  • 15-ounce can of diced tomatoes
  • 2 tbsp paprika
  • 1 tbsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1.5 cups shredded cheese

Cornbread topping:

  • 1.75 cups milk
  • 1 tsp vinegar
  • 1.75 cups cornmeal
  • 0.5 cups all-purpose flour
  • 2 tbsp baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 2 tbsp melted butter or oil


Preheat the oven or smoker to 400°F.

In a large skillet, use the olive oil to saute the onions, adding the garlic once the onion is translucent. Add the ground beef and cook until browned.

Add the diced capsicum, corn, beans, tomatoes, and spices, mixing until well combined.

Simmer for approximately 15 minutes until the capsicum has softened.

While the beef mixture is simmering, prepare the cornbread topping by adding vinegar to milk. Let the vinegar and milk mixture sit while you combine the dry ingredients in a large bowl. Once mixed, add eggs, melted butter, and milk mixture. Stir to combine.

Remove the ground beef mixture from the heat. Top with grated cheese, then carefully layer the cornbread mixture over the top.

Bake in the preheated smoker, grill, or oven for approximately 30 minutes until the cornbread is golden brown.

Allow the cowboy cornbread to cool slightly before serving.


This recipe has room for you to improvise. Feel free to use frozen corn if you don’t have a can of corn in the cupboard. Omit any vegetables you don’t like and add in another that you do. You can also use a premade cornbread mix if you want a slightly faster option.
